Shakshuka
A classic Middle Eastern and North African breakfast dish made with tomato sauce, peppers, spices, and eggs.

- 4 large eggs
- 1 large onion chopped
- 1 large red bell pepper chopped
- 2 garlic cloves minced
- 4 ripe tomatoes chopped, or 1 cup tomato purée
- 1 tablespoon tomato paste
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley or cilantro for garnish
Heat olive oil in a pan over medium heat. Add the chopped onion and red bell pepper, and sauté until softened, about 5 minutes.
Add the garlic and sauté for another minute.
Add tomatoes, tomato paste, paprika, cumin, salt, and pepper. Simmer for about 10 minutes until the sauce thickens.
Make small wells in the sauce with a spoon and crack an egg into each well. Cover the pan with a lid and cook until the eggs are set to your liking, about 5 minutes.
Garnish with fresh parsley or cilantro and serve hot.
