Samphire Salad (Lemon and Garlic)

Ingredients
  

  • 2 cups fresh samphire sea beans, washed
  • 1 garlic clove minced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Fresh parsley for garnish optional

Instructions
 

  • In a bowl, combine the washed samphire with minced garlic, olive oil, and lemon juice.
  • Toss well until the samphire is coated in the dressing.
  • Season with salt and black pepper to taste.
  • Garnish with fresh parsley if desired.
  • Serve immediately or refrigerate for 15 minutes before serving for a chilled salad.
