Samosa (Potato and Spiced Pastry)

A popular Indian snack, Samosas are crispy pastries filled with a savory mixture of spiced potatoes and peas, perfect as an appetizer or snack.

Ingredients
  

For the Dough:

  • 2 cups all-purpose flour
  • 1/4 cup vegetable oil
  • 1/2 tsp salt
  • Water as needed

For the Filling:

  • 2 large potatoes boiled and mashed
  • 1/2 cup peas cooked
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric
  • 1 tsp garam masala
  • 1 tsp chili powder
  • 1 tbsp vegetable oil
  • Salt to taste

For Frying:

  • Vegetable oil

Instructions
 

Make the Dough:

  • In a bowl, mix flour, salt, and oil. Gradually add water and knead into a firm dough. Cover and let it rest for 20 minutes.

Prepare the Filling:

  • Heat oil in a pan. Add cumin seeds and let them splutter. Stir in turmeric, garam masala, chili powder, and mashed potatoes. Add peas, mix well, and cook for 2 minutes. Let it cool.

Assemble the Samosas:

  • Divide the dough into small balls and roll each into a thin circle. Cut each circle in half. Fold into a cone shape and fill with the potato mixture. Seal the edges with water.

Fry the Samosas:

  • Heat oil in a deep pan. Fry the samosas in batches until golden and crispy. Drain on paper towels.
  • Serve hot with green chutney or tamarind sauce.
