Revani (Semolina Cake in Syrup)

Revani is a traditional Turkish dessert made with semolina, soaked in a sweet syrup, and garnished with shredded coconut or nuts for a moist and delicious treat.

Ingredients
  

For the Cake:

  • 1 cup semolina
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 3 eggs
  • 1 cup yogurt
  • 1/2 cup vegetable oil
  • 1 tsp baking powder
  • Zest of 1 orange or lemon

For the Syrup:

  • 2 cups sugar
  • 2 cups water
  • Juice of 1/2 lemon

For Garnish:

  • Shredded coconut or crushed pistachios

Instructions
 

  • Preheat the oven to 180°C (350°F). Grease a baking dish.
  • In a mixing bowl, beat eggs and sugar until light and fluffy. Add yogurt, oil, and orange zest, mixing well. Gradually stir in semolina, flour, and baking powder to form a smooth batter.
  • Pour the batter into the prepared baking dish and bake for 30 minutes, or until golden and a toothpick inserted into the center comes out clean.
  • While the cake is baking, prepare the syrup. Combine sugar, water, and lemon juice in a saucepan and boil for 5-7 minutes until slightly thickened. Let the syrup cool.
  • Pour the cooled syrup evenly over the warm cake. Allow the cake to absorb the syrup for at least 1 hour before serving.
  • Garnish with shredded coconut or pistachios and slice into squares.
