Revani (Semolina Cake in Syrup)
Revani is a traditional Turkish dessert made with semolina, soaked in a sweet syrup, and garnished with shredded coconut or nuts for a moist and delicious treat.

For the Cake:
- 1 cup semolina
- 1 cup all-purpose flour
- 1 cup sugar
- 3 eggs
- 1 cup yogurt
- 1/2 cup vegetable oil
- 1 tsp baking powder
- Zest of 1 orange or lemon
For the Syrup:
- 2 cups sugar
- 2 cups water
- Juice of 1/2 lemon
For Garnish:
- Shredded coconut or crushed pistachios
Preheat the oven to 180°C (350°F). Grease a baking dish.
In a mixing bowl, beat eggs and sugar until light and fluffy. Add yogurt, oil, and orange zest, mixing well. Gradually stir in semolina, flour, and baking powder to form a smooth batter.
Pour the batter into the prepared baking dish and bake for 30 minutes, or until golden and a toothpick inserted into the center comes out clean.
While the cake is baking, prepare the syrup. Combine sugar, water, and lemon juice in a saucepan and boil for 5-7 minutes until slightly thickened. Let the syrup cool.
Pour the cooled syrup evenly over the warm cake. Allow the cake to absorb the syrup for at least 1 hour before serving.
Garnish with shredded coconut or pistachios and slice into squares.
