Ingredients
  

  • 1.5 cups quinoa flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1.5 cups almond milk or water
  • 2 large eggs
  • 2 tablespoons melted coconut oil or olive oil
  • 1 teaspoon vanilla extract
  • Fresh fruit and maple syrup for serving

Instructions
 

  • In a bowl, mix the quinoa flour, sugar, baking powder, and salt.
  • In a separate bowl, whisk the almond milk, eggs, melted oil, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until smooth.
  • Preheat your waffle iron and lightly coat it with non-stick spray. Pour the batter onto the iron and cook until golden brown.
  • Serve the warm waffles with fresh fruit and maple syrup.
