Pumpkin Waffle

- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon salt
- 1 cup pumpkin puree
- 1.5 cups milk
- 2 large eggs
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- Honey maple syrup, or whipped cream for serving
In a bowl, mix the flour, sugar, baking powder, cinnamon, ginger, and salt.
In a separate bowl, whisk the pumpkin puree, milk, eggs, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until smooth.
Preheat your waffle iron and lightly coat it with non-stick spray. Pour the batter onto the iron and cook until golden brown.
Serve the warm waffles with honey, maple syrup, or whipped cream.
