- 2 ripe pears thinly sliced
- 4 cups fresh arugula leaves
- 100 g Roquefort cheese crumbled
- 1/2 cup toasted walnuts
- 1/4 cup dried cranberries or raisins optional
For the Dressing
- 3 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- 1 teaspoon Dijon mustard
- Salt and black pepper
Place the arugula in a large salad bowl.
Layer the thinly sliced pears over the arugula.
Add the crumbled Roquefort cheese and toasted walnuts.
Sprinkle with dried cranberries or raisins if desired.
For the dressing, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and black pepper.
