Pear, Roquefort Cheese, and Arugula Salad

Ingredients
  

  • 2 ripe pears thinly sliced
  • 4 cups fresh arugula leaves
  • 100 g Roquefort cheese crumbled
  • 1/2 cup toasted walnuts
  • 1/4 cup dried cranberries or raisins optional

For the Dressing

  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • Salt and black pepper

Instructions
 

  • Place the arugula in a large salad bowl.
  • Layer the thinly sliced pears over the arugula.
  • Add the crumbled Roquefort cheese and toasted walnuts.
  • Sprinkle with dried cranberries or raisins if desired.
  • For the dressing, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and black pepper.
  • Drizzle the dressing over the salad and toss gently before serving.
