Season the chicken breasts with salt and black pepper. Heat olive oil in a skillet over medium heat and sear the chicken breasts for 5-6 minutes on each side until golden brown. Remove and keep warm.
In the same skillet, add orange juice, orange zest, honey, soy sauce, and optional ginger. Stir and bring to a boil for 2-3 minutes.
Add the cornstarch mixture and cook until the sauce thickens.
Return the chicken to the skillet, coat with the sauce, and simmer for 2-3 minutes.
Serve warm with rice or vegetables.
