Olive and Cheese Lettuce Wraps

Fresh and crunchy lettuce leaves filled with a flavorful mixture of olives, cheese, and herbs, making for a light and healthy snack or appetizer.

Ingredients
  

  • 8 large lettuce leaves such as Romaine or Butterhead
  • 1/2 cup olives pitted and chopped
  • 1/2 cup cheese feta, goat cheese, or mozzarella, crumbled or chopped
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • Salt and black pepper to taste
  • Fresh herbs for garnish optional, such as parsley or basil

Instructions
 

  • Wash and dry the lettuce leaves, making sure they are large enough to hold the filling.
  • In a small bowl, mix the chopped olives, cheese, olive oil, lemon juice, salt, and black pepper.
  • Place a spoonful of the olive and cheese mixture onto each lettuce leaf.
  • Carefully fold the edges of the lettuce over the filling and roll up the leaves like a wrap.
  • Garnish with fresh herbs and serve immediately.
