- 1 cup rolled oats
- 1/2 cup pitted dates
- 1/4 cup almond butter or peanut butter
- 1/4 cup shredded coconut optional
- 1/4 cup chopped nuts e.g., almonds, walnuts
- 1 tsp vanilla extract
In a food processor, blend the oats, dates, almond butter, and vanilla extract until well combined.
Stir in the chopped nuts and shredded coconut if using.
Roll the mixture into small balls and refrigerate for at least 30 minutes.
