  • 1 cup rolled oats
  • 1/2 cup pitted dates
  • 1/4 cup almond butter or peanut butter
  • 1/4 cup shredded coconut optional
  • 1/4 cup chopped nuts e.g., almonds, walnuts
  • 1 tsp vanilla extract

Instructions
 

  • In a food processor, blend the oats, dates, almond butter, and vanilla extract until well combined.
  • Stir in the chopped nuts and shredded coconut if using.
  • Roll the mixture into small balls and refrigerate for at least 30 minutes.
  • Serve as a quick and nutritious snack.
