Mole Poblano (Spicy and Chocolate Sauce with Chicken)

- 4 chicken thighs or breasts
- 4 dried ancho chilies seeded and soaked
- 2 dried guajillo chilies seeded and soaked
- 1 onion chopped
- 2 garlic cloves
- 2 medium tomatoes chopped
- 1/4 cup almonds
- 1/4 cup sesame seeds
- 2 tbsp raisins
- 1 cinnamon stick
- 1/2 tsp cumin
- 50 g dark chocolate grated
- 2 cups chicken broth
- 2 tbsp vegetable oil
- Salt to taste
Heat oil in a large pan and sauté onions, garlic, and tomatoes until soft. Remove from the pan and set aside.
In the same pan, toast the chilies, almonds, sesame seeds, raisins, and cinnamon stick until aromatic.
Blend the sautéed vegetables, toasted ingredients, cumin, and chicken broth into a smooth sauce.
Return the sauce to the pan and simmer for 20 minutes. Stir in grated chocolate and salt, cooking until the sauce thickens.
Cook the chicken in a separate pot until tender. Add the chicken pieces to the mole sauce and simmer for an additional 10 minutes.
Serve hot, garnished with sesame seeds, alongside rice or tortillas.
