Menemen with Sucuk (Turkish Scrambled Eggs with Sausage)
A delicious and hearty Turkish breakfast dish made with tomatoes, peppers, sucuk, and eggs.

- 2 tablespoons olive oil
- 1 medium onion finely chopped
- 2 green peppers finely chopped
- 1 cup sucuk Turkish sausage, sliced or diced
- 4 ripe tomatoes chopped
- 4 large eggs
- Salt and pepper to taste
- Optional: fresh parsley or red pepper flakes for garnish
Heat olive oil in a skillet over medium heat. Add the onion and sauté until softened.
Add the peppers and cook for a few more minutes.
Add the sucuk slices and cook until they start to brown.
Add the chopped tomatoes and cook until softened and the liquid reduces.
Crack the eggs into the skillet and stir to combine or leave them whole. Season with salt and pepper.
Garnish with fresh parsley or red pepper flakes and serve hot.
