Menemen with Sucuk (Turkish Scrambled Eggs with Sausage)

Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion finely chopped
  • 2 green peppers finely chopped
  • 1 cup sucuk Turkish sausage, sliced or diced
  • 4 ripe tomatoes chopped
  • 4 large eggs
  • Salt and pepper to taste
  • Optional: fresh parsley or red pepper flakes for garnish

Instructions
 

  • Heat olive oil in a skillet over medium heat. Add the onion and sauté until softened.
  • Add the peppers and cook for a few more minutes.
  • Add the sucuk slices and cook until they start to brown.
  • Add the chopped tomatoes and cook until softened and the liquid reduces.
  • Crack the eggs into the skillet and stir to combine or leave them whole. Season with salt and pepper.
  • Garnish with fresh parsley or red pepper flakes and serve hot.
