Mediterranean Chickpea Salad
A light and filling salad made with fresh vegetables, olive oil, and lemon.

- 2 cups cooked chickpeas
- 1 cup cherry tomatoes halved
- 1/2 cup cucumber diced
- 1/4 cup finely chopped red onion
- 1/4 cup black olives pitted and sliced
- 2 tablespoons finely chopped fresh parsley
- 1 tablespoon finely chopped fresh mint optional
Dressing
- 3 tablespoons olive oil
- 1.5 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
In a large salad bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, olives, parsley, and mint.
For the dressing, whisk together olive oil, lemon juice, Dijon mustard, salt, and black pepper.
Pour the dressing over the salad and toss gently.
Serve chilled.
