Ingredients
6 large eggs
1 large onion, finely chopped
2 tomatoes, finely chopped
1 green chili, finely chopped
1/4 cup fresh cilantro leaves, chopped
1 teaspoon turmeric powder
1 teaspoon red chili powder (optional)
1 teaspoon garam masala
1 teaspoon cumin seeds
2 tablespoons olive oil or ghee
Salt, to taste
Instructions
In a bowl, beat the eggs and set aside.
Heat a pan over medium heat, add the oil, and sauté the onions until golden.
Add the green chili and sauté for another minute, then add tomatoes and cook until softened.
Add turmeric, red chili powder, garam masala, and cumin, stirring the spices for a few seconds to release their aroma.
Pour in the beaten eggs, stirring continuously until the eggs are fully cooked.
Garnish with fresh cilantro leaves and serve hot.
