- 1 cup quinoa cooked and cooled
- 1 ripe mango diced
- 1 ripe avocado diced
- 1/2 cup red bell pepper chopped
- 1/4 cup fresh cilantro chopped
- 2 tbsp olive oil
- 1 tbsp lime juice
- 1 tsp honey or maple syrup optional
- Salt and black pepper to taste
Cook the quinoa according to package instructions and let it cool.
In a large bowl, combine the cooled quinoa, diced mango, avocado, red bell pepper, and fresh cilantro.
In a small bowl, whisk together olive oil, lime juice, honey (if using), salt, and black pepper.
Drizzle the dressing over the salad and toss gently to combine.
