Malai Kofta (Paneer and Vegetable Dumplings in Creamy Curry)

Ingredients
  

For the Kofta:

  • 200 g paneer grated
  • 1 cup boiled and mashed potatoes
  • 1/4 cup grated carrots
  • 2 tbsp cornstarch
  • 1 tsp garam masala
  • Salt to taste
  • Oil for frying

For the Curry:

  • 2 tbsp vegetable oil or ghee
  • 1 onion finely chopped
  • 2 garlic cloves minced
  • 1 tsp grated ginger
  • 1 cup tomato puree
  • 1/2 tsp turmeric
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp chili powder
  • 1/2 cup heavy cream
  • Salt to taste
  • Fresh cilantro for garnish

Instructions
 

  • Mix paneer, mashed potatoes, grated carrots, cornstarch, garam masala, and salt in a bowl. Shape into small balls and fry them until golden brown. Drain on paper towels.
  • Heat oil in a pan and sauté onions until golden. Add garlic and ginger, cooking until fragrant. Stir in tomato puree, turmeric, cumin, coriander, and chili powder, and cook until the oil separates.
  • Add cream to the pan and simmer the curry for 5 minutes. Gently add the fried kofta balls to the sauce, simmering for 2-3 minutes.
  • Garnish with cilantro and a swirl of cream. Serve hot with naan or rice.
