Malai Kofta (Paneer and Vegetable Dumplings in Creamy Curry)

For the Kofta:
- 200 g paneer grated
- 1 cup boiled and mashed potatoes
- 1/4 cup grated carrots
- 2 tbsp cornstarch
- 1 tsp garam masala
- Salt to taste
- Oil for frying
For the Curry:
- 2 tbsp vegetable oil or ghee
- 1 onion finely chopped
- 2 garlic cloves minced
- 1 tsp grated ginger
- 1 cup tomato puree
- 1/2 tsp turmeric
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp chili powder
- 1/2 cup heavy cream
- Salt to taste
- Fresh cilantro for garnish
Mix paneer, mashed potatoes, grated carrots, cornstarch, garam masala, and salt in a bowl. Shape into small balls and fry them until golden brown. Drain on paper towels.
Heat oil in a pan and sauté onions until golden. Add garlic and ginger, cooking until fragrant. Stir in tomato puree, turmeric, cumin, coriander, and chili powder, and cook until the oil separates.
Add cream to the pan and simmer the curry for 5 minutes. Gently add the fried kofta balls to the sauce, simmering for 2-3 minutes.
Garnish with cilantro and a swirl of cream. Serve hot with naan or rice.
