- 4 salmon fillets
- 1 tablespoon olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 2 tablespoons finely chopped fresh herbs dill, parsley, thyme
- Salt and black pepper
- 1 bunch asparagus tough ends trimmed
Dressing
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- Salt and black pepper
Marinate the salmon fillets with olive oil, lemon juice, lemon zest, fresh herbs, salt, and black pepper, and let sit for 10 minutes.
Steam the asparagus for 5-7 minutes until tender.
Heat a skillet over medium heat and cook the marinated salmon fillets for 4-5 minutes on each side.
For the dressing, whisk together olive oil, lemon juice, Dijon mustard, salt, and black pepper.
Plate the salmon and asparagus, drizzle with the dressing, and serve warm.
