Kuzu Tandır (Slow-Cooked Lamb)
Kuzu Tandır is a traditional Turkish dish where lamb is slow-cooked until tender and juicy, often served with pilaf and roasted vegetables for a complete meal.

- 1.5 kg lamb shank or shoulder
- 2 tbsp olive oil
- 4 garlic cloves sliced
- 1 onion sliced
- 1 carrot sliced
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
- 1 cup water or lamb stock
Preheat the oven to 160°C (320°F). Rub the lamb with olive oil, salt, and pepper.
In a large ovenproof pot, heat a small amount of oil. Sear the lamb on all sides until golden brown. Remove and set aside.
In the same pot, sauté onions, garlic, and carrots until soft. Add thyme, rosemary, and lamb stock. Place the lamb back into the pot.
Cover the pot with a lid or foil and cook in the oven for 3 hours, basting occasionally, until the lamb is tender and falls off the bone.
Serve hot with buttery pilaf and roasted vegetables.
