Kuzu Tandır (Slow-Cooked Lamb)

Kuzu Tandır is a traditional Turkish dish where lamb is slow-cooked until tender and juicy, often served with pilaf and roasted vegetables for a complete meal.

Ingredients
  

  • 1.5 kg lamb shank or shoulder
  • 2 tbsp olive oil
  • 4 garlic cloves sliced
  • 1 onion sliced
  • 1 carrot sliced
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste
  • 1 cup water or lamb stock

Instructions
 

  • Preheat the oven to 160°C (320°F). Rub the lamb with olive oil, salt, and pepper.
  • In a large ovenproof pot, heat a small amount of oil. Sear the lamb on all sides until golden brown. Remove and set aside.
  • In the same pot, sauté onions, garlic, and carrots until soft. Add thyme, rosemary, and lamb stock. Place the lamb back into the pot.
  • Cover the pot with a lid or foil and cook in the oven for 3 hours, basting occasionally, until the lamb is tender and falls off the bone.
  • Serve hot with buttery pilaf and roasted vegetables.
