Keşkek (Wheat and Meat Mash)
Keşkek is a traditional Turkish dish made with slow-cooked wheat and tender meat, blended into a creamy consistency and garnished with butter and spices.

- 2 cups hulled wheat soaked overnight
- 500 g lamb or beef bone-in
- 4 cups water or broth
- 2 tbsp butter
- 1 tsp paprika
- Salt to taste
Cook the soaked wheat and meat in a large pot with water or broth over low heat for about 3 hours, stirring occasionally, until the wheat is soft and the meat falls off the bone.
Remove the meat from the pot, shred it, and discard the bones.
Mash the wheat mixture with a wooden spoon or blend lightly until creamy. Mix in the shredded meat and season with salt.
Melt the butter in a small pan, stir in the paprika, and drizzle over the Keşkek.
Serve hot, garnished with fresh parsley if desired.
