Karnıyarık (Stuffed Eggplants with Ground Meat)
Karnıyarık is a traditional Turkish dish featuring tender eggplants stuffed with a savory ground meat mixture, baked to perfection and served as a hearty meal.

- 4 medium eggplants
- 300 g ground beef or lamb
- 1 onion finely chopped
- 2 garlic cloves minced
- 1 tomato diced
- 2 tbsp olive oil
- 1 tsp tomato paste
- 1/2 tsp paprika
- Salt and pepper to taste
- 1 cup hot water
- Slices of tomato and green peppers for garnish
- Fresh parsley for garnish
Peel the eggplants in stripes, leaving some skin intact, and fry them lightly in olive oil until softened. Set aside on a paper towel to drain excess oil.
In a pan, sauté the onions and garlic in olive oil until soft. Add the ground beef, cooking until browned. Stir in tomato paste, diced tomatoes, paprika, salt, and pepper. Cook for 5 minutes.
Make a slit in each eggplant and stuff it with the meat mixture. Place them in a baking dish and top each with a slice of tomato and green pepper.
Pour hot water into the dish and bake in a preheated oven at 180°C (350°F) for 25-30 minutes.
Garnish with fresh parsley and serve warm with rice or bulgur pilaf.
