Ice Cream Sandwich (Between Cookies)

- 8 large cookies e.g., chocolate chip, oatmeal, or sugar cookies
- 500 ml ice cream vanilla, chocolate, or your favorite flavor
- Optional: Chocolate chips sprinkles, or crushed nuts for edges
Place the cookies on a flat surface with their bottoms facing up.
Scoop a generous amount of ice cream onto the flat side of one cookie.
Gently press another cookie on top to form a sandwich.
Smooth the edges of the ice cream with a knife or spoon.
Roll the edges of the ice cream in chocolate chips, sprinkles, or crushed nuts if desired.
Place the assembled sandwiches on a tray lined with parchment paper and freeze for at least 1 hour to set.
Serve directly from the freezer for a cool and satisfying treat.
