Ice Cream Sandwich (Between Cookies)

Ingredients
  

  • 8 large cookies e.g., chocolate chip, oatmeal, or sugar cookies
  • 500 ml ice cream vanilla, chocolate, or your favorite flavor
  • Optional: Chocolate chips sprinkles, or crushed nuts for edges

Instructions
 

  • Place the cookies on a flat surface with their bottoms facing up.
  • Scoop a generous amount of ice cream onto the flat side of one cookie.
  • Gently press another cookie on top to form a sandwich.
  • Smooth the edges of the ice cream with a knife or spoon.
  • Roll the edges of the ice cream in chocolate chips, sprinkles, or crushed nuts if desired.
  • Place the assembled sandwiches on a tray lined with parchment paper and freeze for at least 1 hour to set.
  • Serve directly from the freezer for a cool and satisfying treat.
