Huevos Rancheros
A delicious Mexican breakfast dish featuring tortillas topped with eggs, black beans, tomato salsa, avocado, and cheese.

- 4 corn or flour tortillas
- 4 large eggs
- 2 cups black beans (cooked or canned, rinsed)
- 2 cups tomato salsa or sauce
- 1/2 cup shredded white cheese or cheddar
- 1 avocado, sliced
- Fresh cilantro leaves, for garnish
- Salt and pepper, to taste
- A small amount of olive oil for cooking
Heat a skillet over medium heat, lightly grease, and warm the tortillas for 1-2 minutes on each side. Set them aside.
In the same skillet, add a little oil, crack the eggs, and cook to desired doneness (sunny-side up or fully cooked).
Place the warmed tortillas on plates, then add black beans and warm salsa or tomato sauce on top.
Place one egg on each tortilla and sprinkle with shredded cheese.
Garnish with avocado slices and fresh cilantro leaves. Add salt and pepper to taste, and serve immediately.
