Hearty Beef and Barley Soup

- 300 g beef cut into cubes
- 1 tablespoon olive oil
- 1 onion chopped
- 2 garlic cloves grated
- 1 carrot chopped
- 1 celery stalk chopped
- 1 cup barley
- 6 cups beef broth or water
- 1 teaspoon thyme
- 1 teaspoon cumin
- Salt and black pepper
- Fresh parsley for garnish
Heat olive oil in a large pot and brown the beef cubes for 8-10 minutes.
Add the chopped onion and garlic, and sauté for another 3-4 minutes.
Stir in the chopped carrot and celery, cooking for 5 more minutes.
Add the barley, beef broth, and spices. Stir well and bring to a boil.
Reduce heat and simmer for about 50 minutes, stirring occasionally, until the barley and beef are tender.
Season with salt and black pepper. Serve hot in bowls, garnished with fresh parsley.
