Hearty Beef and Barley Soup

Ingredients
  

  • 300 g beef cut into cubes
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 garlic cloves grated
  • 1 carrot chopped
  • 1 celery stalk chopped
  • 1 cup barley
  • 6 cups beef broth or water
  • 1 teaspoon thyme
  • 1 teaspoon cumin
  • Salt and black pepper
  • Fresh parsley for garnish

Instructions
 

  • Heat olive oil in a large pot and brown the beef cubes for 8-10 minutes.
  • Add the chopped onion and garlic, and sauté for another 3-4 minutes.
  • Stir in the chopped carrot and celery, cooking for 5 more minutes.
  • Add the barley, beef broth, and spices. Stir well and bring to a boil.
  • Reduce heat and simmer for about 50 minutes, stirring occasionally, until the barley and beef are tender.
  • Season with salt and black pepper. Serve hot in bowls, garnished with fresh parsley.
