- 4 large eggs
- 250 g ground meat (preferably beef or lamb)
- 1 onion (chopped)
- 1 tomato (diced)
- 1 tablespoon olive oil
- Salt and pepper (to taste)
- Parsley (for garnish, optional)
Heat the olive oil in a pan, add the chopped onion, and sauté until translucent.
Add the ground meat and stir until fully cooked. Then add the tomatoes and cook for another 5 minutes.
Crack the eggs into the pan, season with salt and pepper, and cook until the eggs are done to your liking.
Optionally garnish with parsley and serve warm.
