Ground Meat and Cheese Stuffed Zucchini Boats
A savory dish of zucchini halves filled with a delicious mixture of ground meat, herbs, and melted cheese, baked to perfection.

- 4 medium zucchinis
- 300 g ground beef or ground turkey
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/4 onion finely chopped
- 2 garlic cloves minced
- 1 tsp dried oregano
- 1/2 tsp paprika
- Salt and black pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish optional
Preheat the oven to 180°C (350°F).
Slice the zucchinis in half lengthwise and scoop out the center to create a hollow boat. Set aside.
Heat olive oil in a pan over medium heat. Add the chopped onion and garlic, sautéing until softened, about 3 minutes.
Add the ground meat to the pan, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
Stir in the oregano, paprika, salt, and black pepper.
Stuff the zucchini boats with the cooked meat mixture, pressing gently to fill.
Top each zucchini boat with mozzarella and Parmesan cheese.
Place the stuffed zucchinis on a baking sheet and bake for 20-25 minutes, until the zucchinis are tender and the cheese is melted and golden.
Garnish with fresh parsley if desired and serve immediately.
