Ingredients
  

For the Salad

  • 2 cups cooked and shredded chicken breast
  • 1/2 cup Greek yogurt
  • 1 teaspoon lemon juice
  • 1 garlic clove grated
  • 1/2 cup diced cucumber
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup finely chopped red onion
  • 1 teaspoon chopped fresh mint or parsley
  • Salt and black pepper

For the Wrap

  • 4 large whole wheat tortillas
  • 2 cups lettuce or mixed greens

Instructions
 

  • In a large bowl, mix together the cooked chicken, Greek yogurt, lemon juice, grated garlic, cucumber, cherry tomatoes, red onion, and fresh mint/parsley. Season with salt and black pepper.
  • Lay out the tortillas and add a handful of lettuce or mixed greens to each.
  • Divide the chicken salad evenly among the tortillas, placing it over the greens.
  • Roll the tortillas tightly into wraps.
  • Serve immediately or enjoy chilled.
