Greek Yogurt Chicken Salad Wrap

For the Salad
- 2 cups cooked and shredded chicken breast
- 1/2 cup Greek yogurt
- 1 teaspoon lemon juice
- 1 garlic clove grated
- 1/2 cup diced cucumber
- 1/2 cup cherry tomatoes halved
- 1/4 cup finely chopped red onion
- 1 teaspoon chopped fresh mint or parsley
- Salt and black pepper
For the Wrap
- 4 large whole wheat tortillas
- 2 cups lettuce or mixed greens
In a large bowl, mix together the cooked chicken, Greek yogurt, lemon juice, grated garlic, cucumber, cherry tomatoes, red onion, and fresh mint/parsley. Season with salt and black pepper.
Lay out the tortillas and add a handful of lettuce or mixed greens to each.
Divide the chicken salad evenly among the tortillas, placing it over the greens.
Roll the tortillas tightly into wraps.
Serve immediately or enjoy chilled.
