Gözleme (Cheese or Spinach Flatbread)
Gözleme is a traditional Turkish flatbread filled with delicious options like melted cheese or spinach, cooked to golden perfection and perfect as a light meal or snack.

For the Dough:
- 3 cups all-purpose flour
- 1/2 tsp salt
- 1 cup water or as needed
For the Filling:
- 1 cup crumbled feta cheese or ricotta
- 1 cup spinach chopped, optional
- 1 tbsp olive oil
- Optional: herbs like parsley or dill
In a large bowl, mix flour and salt. Gradually add water and knead into a soft dough. Cover and let it rest for 15 minutes.
Divide the dough into small balls and roll each into a thin circle.
Spread the filling (cheese, spinach, or a combination) over half of the circle, then fold the other half over and seal the edges.
Heat a griddle or skillet over medium heat. Cook each gözleme for 2-3 minutes on each side until golden brown, brushing with olive oil if desired.
Serve hot, garnished with fresh parsley.
