Ingredients
  

  • 2 cups gluten-free flour blend
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs separated
  • 1.75 cups milk can use almond or coconut milk
  • 1/2 cup melted coconut oil or butter
  • 1 teaspoon vanilla extract

Instructions
 

  • In a bowl, mix the gluten-free flour blend, sugar, baking powder, and salt.
  • Whisk the egg yolks with the milk, melted coconut oil, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until smooth.
  • In a separate bowl, beat the egg whites until stiff peaks form and gently fold them into the batter.
  • Preheat your waffle iron and lightly coat it with non-stick spray. Pour the batter onto the iron and cook until golden brown.
  • Serve with fresh fruit, maple syrup, or honey.
