- 2 cups gluten-free flour blend
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 2 large eggs separated
- 1.75 cups milk can use almond or coconut milk
- 1/2 cup melted coconut oil or butter
- 1 teaspoon vanilla extract
In a bowl, mix the gluten-free flour blend, sugar, baking powder, and salt.
Whisk the egg yolks with the milk, melted coconut oil, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until smooth.
In a separate bowl, beat the egg whites until stiff peaks form and gently fold them into the batter.
Preheat your waffle iron and lightly coat it with non-stick spray. Pour the batter onto the iron and cook until golden brown.
