Forest Berry and Cream Ice Cream

Ingredients
  

  • 200 g mixed forest berries e.g., blueberries, raspberries, blackberries, strawberries
  • 250 ml heavy cream
  • 150 ml whole milk
  • 80 g granulated sugar
  • 1/2 tsp vanilla extract

Instructions
 

  • Blend the mixed forest berries into a smooth puree. Strain the mixture through a fine sieve to remove seeds (optional).
  • In a mixing bowl, whisk together the heavy cream, milk, sugar, and vanilla extract until the sugar dissolves.
  • Gently fold the berry puree into the cream mixture, creating a marbled effect or fully mixing for an even berry flavor.
  • Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
  • If you don’t have an ice cream maker, pour the mixture into a shallow dish and freeze for 1 hour. Stir vigorously to break up ice crystals, then return to the freezer. Repeat this process every 30 minutes for 4 hours until creamy and frozen.
  • Scoop the ice cream into bowls or cones. Garnish with fresh berries for an extra burst of flavor.
