Forest Berry and Cream Ice Cream
A creamy and fruity ice cream infused with the vibrant flavors of mixed forest berries, perfect for a refreshing and indulgent treat.

- 200 g mixed forest berries e.g., blueberries, raspberries, blackberries, strawberries
- 250 ml heavy cream
- 150 ml whole milk
- 80 g granulated sugar
- 1/2 tsp vanilla extract
Blend the mixed forest berries into a smooth puree. Strain the mixture through a fine sieve to remove seeds (optional).
In a mixing bowl, whisk together the heavy cream, milk, sugar, and vanilla extract until the sugar dissolves.
Gently fold the berry puree into the cream mixture, creating a marbled effect or fully mixing for an even berry flavor.
Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
If you don’t have an ice cream maker, pour the mixture into a shallow dish and freeze for 1 hour. Stir vigorously to break up ice crystals, then return to the freezer. Repeat this process every 30 minutes for 4 hours until creamy and frozen.
Scoop the ice cream into bowls or cones. Garnish with fresh berries for an extra burst of flavor.
