Eggs with Olives and Peppers Recipe

- 4 large eggs
- 1/2 cup green or black olives (pitted and chopped)
- 1 red bell pepper (chopped)
- 1 green bell pepper (chopped)
- 1 tablespoon olive oil
- Salt and pepper (to taste)
- Fresh thyme or parsley (for garnish, optional)
Heat the olive oil in a pan, add the chopped peppers, and sauté for 3-4 minutes.
Add the chopped olives to the pan and mix well.
Crack the eggs into the pan, season with salt and pepper, and cook until the eggs are done to your liking.
Optionally garnish with fresh thyme or parsley and serve warm.
