Instructions
Peel and dice the hard-boiled eggs into small cubes.
In a bowl, mix the eggs with light mayonnaise, Dijon mustard, lemon juice, salt, and black pepper to create a creamy egg salad.
Spread the egg salad evenly over half the slices of bread.
Top with fresh watercress leaves and close the sandwiches with the remaining slices of bread.
Cut the sandwiches diagonally and serve immediately.
