Creamy Cauliflower and Cheddar Soup

Ingredients

medium cauliflower
cut into florets
1
onion
finely chopped
2
garlic cloves
grated
2
tablespoons
butter

cups
vegetable stock
1
cup
milk or cream
1.5
cups
grated cheddar cheese
1
teaspoon
Dijon mustard
Salt and black pepper
For garnish: Chopped green onions
extra cheddar, and croutons
Instructions
Melt the butter in a pot over medium heat. Add the onion and sauté for 3-4 minutes.
Stir in the garlic and cook for another minute.
Add the cauliflower florets and cook for a few minutes.
Pour in the vegetable stock and bring to a boil. Reduce the heat and simmer for 20 minutes until the cauliflower is tender.
Blend the soup until smooth using an immersion blender.
Stir in the milk or cream, grated cheddar cheese, and Dijon mustard. Season with salt and black pepper.
Serve hot in bowls, garnished with green onions, extra cheddar, and croutons.
