Creamy Cauliflower and Cheddar Soup

A rich and creamy soup made with cauliflower and sharp cheddar cheese.

Ingredients
  

  • 1 medium cauliflower cut into florets
  • 1 onion finely chopped
  • 2 garlic cloves grated
  • 2 tablespoons butter
  • 3 cups vegetable stock
  • 1 cup milk or cream
  • 1.5 cups grated cheddar cheese
  • 1 teaspoon Dijon mustard
  • Salt and black pepper
  • For garnish: Chopped green onions extra cheddar, and croutons

Instructions
 

  • Melt the butter in a pot over medium heat. Add the onion and sauté for 3-4 minutes.
  • Stir in the garlic and cook for another minute.
  • Add the cauliflower florets and cook for a few minutes.
  • Pour in the vegetable stock and bring to a boil. Reduce the heat and simmer for 20 minutes until the cauliflower is tender.
  • Blend the soup until smooth using an immersion blender.
  • Stir in the milk or cream, grated cheddar cheese, and Dijon mustard. Season with salt and black pepper.
  • Serve hot in bowls, garnished with green onions, extra cheddar, and croutons.
