Cottage Cheese and Cinnamon Sweet Pancakes

- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp ground cinnamon
- 1 large egg
- 1 cup milk
- 1 tbsp sugar optional
- 1/2 cup cottage cheese
- 1 tsp vanilla extract
- 1 tbsp butter for frying
- Extra cinnamon for dusting
- Fresh berries for garnish optional
In a bowl, whisk together the flour, baking powder, salt, and cinnamon.
In a separate bowl, whisk the egg, milk, and vanilla extract.
Add the wet ingredients to the dry ingredients and mix until just combined.
Stir in the cottage cheese and sugar (if using).
Heat a non-stick skillet over medium heat and add a little butter to coat the surface.
Pour spoonfuls of the pancake batter onto the skillet and cook for 2-3 minutes on each side until golden brown.
Stack the pancakes and sprinkle with extra cinnamon. Garnish with fresh berries, if desired.
