Coconut and Pineapple Parfait (Tropical Delight)

- 200 g coconut yogurt
- 150 g fresh pineapple diced
- 40 g granola
- 30 g shredded coconut optional, for garnish
- 1 tbsp honey or maple syrup optional
In a mixing bowl, combine the coconut yogurt and honey or maple syrup (if using) and mix until smooth.
In serving glasses, start with a layer of granola at the bottom.
Add a layer of coconut yogurt, followed by a layer of diced pineapple.
Repeat the layers until the glasses are filled, finishing with yogurt on top.
Sprinkle shredded coconut on top for added texture and tropical flavor.
Chill for 15 minutes in the refrigerator or serve immediately.
