Cocoa and Coconut Energy Balls
A healthy and energizing snack made with cocoa and coconut, perfect for a quick energy boost or a satisfying treat.

- 1 cup rolled oats
- 1/4 cup unsweetened cocoa powder
- 1/2 cup shredded coconut plus extra for rolling
- 1/4 cup peanut butter or almond butter
- 2 tbsp honey or maple syrup
- 1 tsp vanilla extract
- 1-2 tbsp almond milk or as needed
In a bowl, combine the oats, cocoa powder, and shredded coconut.
Add the peanut butter (or almond butter), honey (or maple syrup), and vanilla extract to the dry ingredients.
Mix until the mixture comes together. If it's too dry, add almond milk a tablespoon at a time until it reaches a dough-like consistency.
Roll the mixture into 12 small balls.
Roll each ball in the extra shredded coconut to coat.
Place the energy balls on a baking sheet and refrigerate for at least 30 minutes before serving.
