Classic French Onion Soup

A classic soup made with caramelized onions, flavorful broth, melted cheese, and toasted bread.

Ingredients
  

  • 4 large yellow onions thinly sliced
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon flour
  • 1/2 cup white wine optional
  • 6 cups beef or vegetable broth
  • 1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
  • Salt and black pepper

For Topping

  • 4 slices baguette toasted
  • 1 cup grated Gruyère or Swiss cheese

Instructions
 

  • Heat butter and olive oil in a large pot. Add the sliced onions and cook over low heat for 25-30 minutes until golden brown and caramelized.
  • Stir in the flour and cook for 1 minute.
  • Add the white wine and stir until evaporated.
  • Pour in the broth, add thyme, salt, and black pepper, and bring to a boil. Simmer on low heat for 10-15 minutes.
  • Divide the soup into oven-safe bowls. Place a toasted baguette slice on top and sprinkle with grated cheese.
  • Broil in the oven at 200°C (400°F) for 5 minutes until the cheese is melted and bubbly.
  • Serve hot.
