Chicken Sauté with Onion and Tomato Sauce

- 500 g chicken breast cubed
- 2 tablespoons olive oil
- 1 large onion finely chopped
- 2 garlic cloves minced
- 3 tomatoes grated
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- Fresh parsley for garnish
Season the chicken pieces with salt and black pepper.
Heat olive oil in a large skillet over medium heat and sauté the chicken for 5-6 minutes until lightly browned. Remove excess fat if necessary and set aside.
In the same skillet, cook the onions for 4-5 minutes until caramelized. Add garlic and sauté for 1 more minute.
Stir in grated tomatoes, tomato paste, thyme, and paprika. Let the sauce simmer for 8-10 minutes.
Return the chicken to the skillet and stir to coat with the sauce. Cook for another 5 minutes.
Garnish with fresh parsley and serve warm with rice or pasta.
