Chicken Sauté with Onion and Tomato Sauce

Ingredients
  

  • 500 g chicken breast cubed
  • 2 tablespoons olive oil
  • 1 large onion finely chopped
  • 2 garlic cloves minced
  • 3 tomatoes grated
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • Fresh parsley for garnish

Instructions
 

  • Season the chicken pieces with salt and black pepper.
  • Heat olive oil in a large skillet over medium heat and sauté the chicken for 5-6 minutes until lightly browned. Remove excess fat if necessary and set aside.
  • In the same skillet, cook the onions for 4-5 minutes until caramelized. Add garlic and sauté for 1 more minute.
  • Stir in grated tomatoes, tomato paste, thyme, and paprika. Let the sauce simmer for 8-10 minutes.
  • Return the chicken to the skillet and stir to coat with the sauce. Cook for another 5 minutes.
  • Garnish with fresh parsley and serve warm with rice or pasta.
