Ingredients
  

  • 2 chicken breasts grilled and sliced
  • 2 ripe avocados diced
  • 1 large lettuce or 2 cups mixed greens
  • 1 cucumber sliced
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon balsamic vinegar
  • Salt and black pepper

Instructions
 

  • Place the lettuce or mixed greens in a serving bowl.
  • Top with sliced chicken breast, avocado, cucumber, cherry tomatoes, and red onion.
  • In a small bowl, whisk together olive oil, lemon juice, balsamic vinegar, salt, and black pepper to make the dressing.
  • Drizzle the dressing over the salad and toss gently.
  • Serve immediately.
