Chia Seed Coconut Pudding

- 1/2 cup chia seeds
- 1 cup coconut milk or any plant-based milk
- 1 tsp vanilla extract
- 1 tbsp honey or maple syrup optional
- 1/4 cup shredded coconut
- Fresh berries for topping optional
In a bowl, mix the chia seeds, coconut milk, vanilla extract, and sweetener (if using). Stir well to combine.
Cover the bowl and refrigerate for at least 2 hours or overnight to allow the chia seeds to absorb the liquid and thicken.
After the pudding has set, stir it well and divide it into serving bowls or jars.
Top with shredded coconut and fresh berries.
