Cheese Stuffed Mushrooms

- 12 large mushrooms cleaned and stems removed
- 1/2 cup cream cheese or dairy-free cream cheese
- 1/4 cup grated mozzarella cheese or dairy-free mozzarella
- 2 tbsp Parmesan cheese optional
- 1 garlic clove minced
- 1 tbsp fresh parsley chopped
- 1 tbsp olive oil
- Salt and black pepper to taste
Preheat the oven to 180°C (350°F).
Clean the mushrooms and remove the stems carefully. Set the mushroom caps aside.
In a mixing bowl, combine the cream cheese, grated mozzarella, Parmesan (if using), minced garlic, parsley, salt, and black pepper.
Stuff each mushroom cap with the cheese mixture, pressing down gently to fill them completely.
Place the stuffed mushrooms on a baking sheet lined with parchment paper. Drizzle with olive oil.
Bake for 15-20 minutes, or until the cheese is melted and the mushrooms are tender.
Serve warm as an appetizer or snack.
