Ingredients
  

  • 1 cup quinoa rinsed and cooked
  • 1 cup cherry tomatoes halved
  • 1/2 cup fresh mozzarella balls baby mozzarella
  • 1/4 cup fresh basil leaves
  • Salt and black pepper

Balsamic Dressing

  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon honey or maple syrup
  • 1 garlic clove grated

Instructions
 

  • Cook the quinoa and let it cool.
  • In a large bowl, combine the cooked quinoa, cherry tomatoes, mozzarella balls, and fresh basil leaves.
  • For the balsamic dressing, whisk together balsamic vinegar, olive oil, honey, and grated garlic in a small bowl.
  • Drizzle the dressing over the salad and toss gently.
  • Season with salt and black pepper. Serve immediately.
