Caprese Quinoa Salad with Balsamic Dressing

- 1 cup quinoa rinsed and cooked
- 1 cup cherry tomatoes halved
- 1/2 cup fresh mozzarella balls baby mozzarella
- 1/4 cup fresh basil leaves
- Salt and black pepper
Balsamic Dressing
- 2 tablespoons balsamic vinegar
- 1 tablespoon olive oil
- 1 teaspoon honey or maple syrup
- 1 garlic clove grated
Cook the quinoa and let it cool.
In a large bowl, combine the cooked quinoa, cherry tomatoes, mozzarella balls, and fresh basil leaves.
For the balsamic dressing, whisk together balsamic vinegar, olive oil, honey, and grated garlic in a small bowl.
Drizzle the dressing over the salad and toss gently.
Season with salt and black pepper. Serve immediately.
