Baked Stuffed Bell Peppers with Ground Meat and Cheese

- 4 large bell peppers tops cut off and seeds removed
- 250 g ground beef or lamb
- 1/2 cup cooked rice
- 1/2 onion diced
- 2 garlic cloves minced
- 1/2 cup shredded cheese cheddar, mozzarella, or a mix
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp cumin
- Salt and black pepper to taste
- Fresh parsley for garnish
Preheat the oven to 180°C (350°F).
In a skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, cooking until softened (about 5 minutes).
Add the ground meat to the skillet and cook until browned, breaking it apart with a spoon. Season with oregano, cumin, salt, and pepper.
Stir in the cooked rice and remove the skillet from heat.
Stuff the bell peppers with the meat and rice mixture, packing it tightly.
Place the stuffed peppers in a baking dish and top each with shredded cheese.
Cover with foil and bake for 25-30 minutes, until the peppers are tender and the cheese is melted and golden.
Garnish with fresh parsley and serve immediately.
