Baked Spicy Mushroom Tacos

- 2 cups mushrooms sliced
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/4 tsp paprika
- 1/4 tsp garlic powder
- Salt and black pepper to taste
- 8 small corn tortillas
- Fresh salsa
- 1 avocado sliced
- Fresh cilantro for garnish optional
- Lime wedges for serving
Preheat the oven to 200°C (400°F).
In a mixing bowl, toss the sliced mushrooms with olive oil, chili powder, cumin, paprika, garlic powder, salt, and black pepper.
Spread the seasoned mushrooms in a single layer on a baking sheet and bake for 15-20 minutes, or until tender and slightly crispy.
Warm the tortillas in the oven or on a skillet.
To assemble, fill each tortilla with the roasted mushrooms, fresh salsa, and avocado slices.
Garnish with fresh cilantro and serve with lime wedges on the side.
