- 2 medium beets peeled and thinly sliced
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- Salt and black pepper to taste
- Fresh herbs such as parsley or thyme for garnish (optional)
Preheat the oven to 200°C (400°F).
Place the beet slices on a baking sheet and drizzle with olive oil.
Sprinkle the cumin, paprika, garlic powder, salt, and black pepper over the beets, and toss to coat evenly.
Spread the beet slices in a single layer on the baking sheet.
Roast in the oven for 25-30 minutes, flipping halfway through, until the beets are golden and crispy.
Garnish with fresh herbs if desired and serve hot.
