Baked Potato and Eggs

A hearty breakfast recipe made with baked potatoes and eggs.

Ingredients
  

  • 4 large eggs
  • 2 potatoes, diced
  • 1/2 cup grated cheddar cheese
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Fresh thyme or rosemary, for garnish

Instructions
 

  • Dice the potatoes and toss them with olive oil, salt, and pepper, then spread on a parchment-lined baking sheet.
  • Bake in a preheated oven at 200°C (392°F) for 20 minutes.
  • Remove from the oven, crack eggs over the potatoes, and sprinkle with cheese.
  • Bake for another 5 minutes, until the eggs are cooked. Garnish with fresh thyme or rosemary and serve hot.
