Ingredients
4 large eggs
2 potatoes, diced
1/2 cup grated cheddar cheese
1 tablespoon olive oil
Salt and pepper, to taste
Fresh thyme or rosemary, for garnish
Instructions
Dice the potatoes and toss them with olive oil, salt, and pepper, then spread on a parchment-lined baking sheet.
Bake in a preheated oven at 200°C (392°F) for 20 minutes.
Remove from the oven, crack eggs over the potatoes, and sprinkle with cheese.
Bake for another 5 minutes, until the eggs are cooked. Garnish with fresh thyme or rosemary and serve hot.
