- 2 medium eggplants sliced into 1/2-inch rounds
- 2 tbsp olive oil
- 1/2 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 1 tsp dried oregano
- Salt and black pepper to taste
- Fresh basil or parsley for garnish optional
Preheat the oven to 200°C (400°F).
Arrange the eggplant slices on a baking sheet lined with parchment paper.
Drizzle the eggplant slices with olive oil, then season with salt, black pepper, and dried oregano.
