Ingredients
  

  • 2 medium eggplants sliced into 1/2-inch rounds
  • 2 tbsp olive oil
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1 tsp dried oregano
  • Salt and black pepper to taste
  • Fresh basil or parsley for garnish optional

Instructions
 

  • Preheat the oven to 200°C (400°F).
  • Arrange the eggplant slices on a baking sheet lined with parchment paper.
  • Drizzle the eggplant slices with olive oil, then season with salt, black pepper, and dried oregano.
  • In a small bowl, mix together the grated Parmesan and breadcrumbs. Sprinkle the mixture evenly over the eggplant slices.
  • Bake for 20-25 minutes, or until the eggplant is golden brown and tender.
  • Garnish with fresh basil or parsley before serving.
