Ingredients
2
medium eggplants
sliced into 1/2-inch rounds

cup
tomato sauce
1 1/2
cups
shredded mozzarella cheese
1/4
cup
grated Parmesan cheese
1
tbsp
olive oil

tsp
dried oregano
1/2
tsp
garlic powder
Salt and black pepper to taste
Fresh basil or parsley for garnish

Instructions
Preheat the oven to 200°C (400°F).
Place the eggplant slices on a baking sheet and brush both sides with olive oil.
Season with salt, black pepper, oregano, and garlic powder.
Bake the eggplant slices for 15-20 minutes, flipping halfway through, until they are golden and tender.
Remove from the oven and spoon a little tomato sauce on top of each slice.
Sprinkle with mozzarella and Parmesan cheese, then return to the oven to bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
Garnish with fresh basil or parsley if desired.
Serve hot as a main or side dish.
