Ingredients
  

  • 2 ripe avocados sliced
  • 1/2 cup walnuts toasted
  • 2 cups mixed greens such as arugula, spinach, or lettuce
  • 1/4 cup red onion thinly sliced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and black pepper to taste
  • Fresh herbs for garnish optional, such as parsley or cilantro

Instructions
 

  • In a large bowl, combine the mixed greens, avocado slices, and toasted walnuts.
  • Add the thinly sliced red onion on top.
  • Drizzle with olive oil and lemon juice, and toss gently to combine.
  • Season with salt and black pepper to taste.
  • Garnish with fresh herbs if desired and serve immediately.
