Avocado and Cottage Cheese Salad

- 2 ripe avocados diced
- 1 cup cottage cheese
- 1 cucumber chopped
- 1 cup cherry tomatoes halved
- 1/4 cup red onion thinly sliced
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and black pepper to taste
- Fresh herbs such as parsley or basil for garnish
In a large bowl, combine the diced avocados, cottage cheese, cucumber, cherry tomatoes, and red onion.
Drizzle with olive oil and lemon juice, and toss gently to combine.
Season with salt and black pepper to taste.
Garnish with fresh herbs before serving.
