Ingredients
  

  • 2 ripe avocados diced
  • 1 cup cottage cheese
  • 1 cucumber chopped
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and black pepper to taste
  • Fresh herbs such as parsley or basil for garnish

Instructions
 

  • In a large bowl, combine the diced avocados, cottage cheese, cucumber, cherry tomatoes, and red onion.
  • Drizzle with olive oil and lemon juice, and toss gently to combine.
  • Season with salt and black pepper to taste.
  • Garnish with fresh herbs before serving.
  • Serve immediately or chill in the fridge for 10-15 minutes for a cooler salad.
