- 6 large eggs
- 1 cup chopped arugula
- 1/2 cup cottage cheese
- 1/4 cup chopped green onions
- Salt and pepper, to taste
- Greased muffin tin (8 cups)
Whisk the eggs in a bowl, adding salt and pepper.
Add the chopped arugula, cottage cheese, and green onions to the egg mixture and stir well.
Pour the mixture evenly into the greased muffin tin cups.
Bake in a preheated oven at 180°C (350°F) for 15 minutes or until the muffins are puffed and set.
Serve warm or cold as desired.
